• 1 cup – pearl Barley
• 6 to 8 cups – water
• Grated rind of 1 Lemon
• 1/4 cup – Sugar
• Juice of 2 Lemons
- Wash the barley in plenty of water, then add it to a heavy saucepan with the water.
- Bring to a boil, reduce heat and simmer gently for 20 to 30 mins, skimming off scum from time to time.
- Remove the pan from the heat and add lemon rind, sugar and stir well.
- Let it cool. Strain and add the lemon juice.
- Use more sugar if necessary.
