Ingredients:

• 3 – Chicken thigh, fillets
• 1 – fresh pineapple, peeled
• 1 – red pepper
• 1 – green pepper
• 1 tbsp – Mint leaves
• 1 tbsp – Honey
• 1 tbsp – oil
• 1 tbsp – Lemon juice

Method:

  1. Cut the chicken, halve the pineapple and the peppers into 3 cm pieces.
  2. Thread the chicken, pineapple and pepper onto skewers.
  3. Blend or process remaining pineapple, mint leaves, honey, oil and lemon juice, until smooth.
  4. Brush some of the pineapple mixture over kebabs.
  5. Barbeque until chicken is cooked through.
  6. Serve pineapple mixture as a sauce.
