• 1 Egg
• 125 gms. Dessicated Coconut
• 125 gmss. Caster Sugar
• 5 halves glace Cherries
- Line a baking tray with rice paper and pre-set oven to 170 degrees C.
- Beat the egg lightly then stir in the coconut and sugar.
- Divide the mixture into 9-10 heaps on the rice paper and press into pyramid shapes or mould with an egg cup.
- Top each pyramid with a cherry half and bake for 15 mins until just tinged golden brown.
- Allow to cool before tearing away the paper.
