Ingredients:

• 1kg – Tomatoes
• 1.5tsp – oil
• 1/2 tsp – panch phoron (a mixture of Methi seeds, mustard seeds, Jeera and kalonji)
• 1/4 cup – Raisins
• 2 tbsp – Jaggery

Method:

  1. Cut tomatoes lengthwise.
  2. Heat oil in a pan and add panchphoron.
  3. When it crackles, add tomatoes, sugar and salt and cover the pan to let it boil.
  4. After the first boil, lower the flame.
  5. Boil till the tomatoes change colour and mixture takes chutney consistency.
  6. Soak raisins in water for 10 mins.
  7. Add raisins to the pan with jaggery.
  8. Bring to a boil.
  9. Take off heat and serve with rice.
