
Ingredients:
• 1kg – Tomatoes
• 1.5tsp – oil
• 1/2 tsp – panch phoron (a mixture of Methi seeds, mustard seeds, Jeera and kalonji)
• 1/4 cup – Raisins
• 2 tbsp – Jaggery
Method:
- Cut tomatoes lengthwise.
- Heat oil in a pan and add panchphoron.
- When it crackles, add tomatoes, sugar and salt and cover the pan to let it boil.
- After the first boil, lower the flame.
- Boil till the tomatoes change colour and mixture takes chutney consistency.
- Soak raisins in water for 10 mins.
- Add raisins to the pan with jaggery.
- Bring to a boil.
- Take off heat and serve with rice.
