
Ingredients:
• 1/3 cup – All purpose flour
• 1/4 cup – butter/margarine
• 1/3 cup – Brown sugar
• 1/2 cup – flaked Coconut
• 1 tbsp – instant coffee powder
• 1/2 tsp – vanilla essence
• 1 – Egg
• 1/4 tsp – soda
• A pinch – salt
Method:
- Cream together butter and sugar till light and fluffy.
- Gradually beat in egg and vanilla essence.
- Sieve dry ingredients and add to the creamed mixture.
- Mix well. Add coconut flakes. Stir.
- Drop the mixture on to the greased sheet with a small spoon
- With a spatula flatten each into a thin 2 1/2 inch circle
- Bake in a mode oven at 375 degree F for 6 mins or until done
- Cool for 1/2 a minute and remove.
