Ingredients:

• 1 lb – rotelle Pasta
• 1 pack – vacuum-packed silken firm Tofu (like Mori-Nu)
• 3/4 cup – soymilk
• 1 cup – Mint leaves
• 2 – Green chillies (like Serrano)
• 3 – small Garlic Cloves
• 1 tsp – cumin (roasted and ground)
• Salt to taste

Method:

  1. Put all ingredients – except the pasta – into a blender and mix until it’s a smooth sauce.
  2. Place the cooked rotelle pasta into a square baking dish. Pour the sauce over it, and toss it so that the sauce makes its way through the pasta.
  3. Bake in a preheated oven at 350-degree, for 15 minutes. If needed, turn the broiler on so the top layer turns golden.
