Ingredients:

• 2 – medium Chicken breasts (boneless and skinless)
• 1.5 cups – fresh bread crumbs (pulse day old bread and some Parsley in a food processor)
• 1/2 cup – curly parsley, finely chopped
• 1 tsp – Cajun spices
• 1/2 tsp – black pepper powder
• Salt to taste
• 1/2 tsp – Red Chilli powder
• 5 tsp – grated Parmesan cheese
• 1/4 cup – yogurt
• Oil to fry
• For Cajun spice mix: 2 tbsp – paprika
• 1 tsp – salt
• 1 tsp – black pepper
• 1 tsp – Garlic powder
• 2 tsp – Onion powder
• 2 tsp – Red Chilli powder
• 1 tsp – dried Oregano
• 1 tsp – dried Thyme
• 1 tsp – cumin powder

Method:

  1. Wash and dry chicken breast. Cut into strips and pound it to flatten it.
  2. Mix some salt and black pepper with the yogurt.
  3. Marinate chicken strips with yogurt for 1/2 hour.
  4. Mix bread crumbs, parsley, Parmesan and spices.
  5. In frying pan, heat 3-4 tbsps oil.
  6. Coat yogurt-covered chicken strips with bread crumb mix and pan fry in oil till it becomes light brown or until cooked.
  7. Tastes good by itself or with ketchup or any hot sauce.
