Ingredients:

• 5 – small brinjals, chopped
• 2 tbsp – oil
• 1 tbsp – curry powder
• salt
• 1/4 tsp – Turmeric powder
• 1/4 tsp – chilli powder
• | For seasoning:
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – Jeera
• 1/2 tsp – Urad Dal
• hing, a dash
• Curry powder (roast in a little oil and grind):
• 1/2 tsp – Urad Dal
• 1/2 tsp – Channa dal
• 1/2 tsp – Coriander seeds
• 2 – Red Chillies

Method:

  1. Heat oil in a wide pan.
  2. Ready the seasoning.
  3. Add chopped or sliced brinjals, turmeric powder, salt, chilli powder and stir gently.
  4. Simmer, place a lid and cook until almost done.
  5. Remove the lid.
  6. Add curry powder and stir for 2 more minutes till the brinjals turn crisp.
