Ingredients:
• 4 medium Potatoes
• 1 large Onion
• 2 pods Garlic
• A small piece of Ginger
• 3 Green chillies
• Oil as needed
• Some Mustard Seeds
• Curry leaves – a few
• 1 red chilli, dry
• 3 Tomatoes
• 1 tsp chilli powder
• 2 tsp – coriander powder
• 1 tsp cumin powder
• 1 tsp Garam Masala
• 1/2 tsp – Turmeric powder
• Salt to taste
• A pinch of Sugar
Method:
- Boil potatoes till done and mash them roughly. Do not make it too smooth.
- Heat oil in a pan and fry mustard, red chilli, and curry leaves.
- Now add sliced onion, chopped garlic, and ginger.
- When golden, add tomatoes and chillies; fry till pulpy.
- Add all the masala powders and the potatoes.
- Fry for a couple of minutes and then add salt and enough water to cover the lot.
- Bring to a boil and allow it to simmer till thick.
- Add sugar to taste.
- Lemon juice is optional.
- This curry can be made in no time and goes well with chapatis and rice.
