Ingredients:

• 4 medium Potatoes
• 1 large Onion
• 2 pods Garlic
• A small piece of Ginger
• 3 Green chillies
• Oil as needed
• Some Mustard Seeds
• Curry leaves – a few
• 1 red chilli, dry
• 3 Tomatoes
• 1 tsp chilli powder
• 2 tsp – coriander powder
• 1 tsp cumin powder
• 1 tsp Garam Masala
• 1/2 tsp – Turmeric powder
• Salt to taste
• A pinch of Sugar

Method:

  1. Boil potatoes till done and mash them roughly. Do not make it too smooth.
  2. Heat oil in a pan and fry mustard, red chilli, and curry leaves.
  3. Now add sliced onion, chopped garlic, and ginger.
  4. When golden, add tomatoes and chillies; fry till pulpy.
  5. Add all the masala powders and the potatoes.
  6. Fry for a couple of minutes and then add salt and enough water to cover the lot.
  7. Bring to a boil and allow it to simmer till thick.
  8. Add sugar to taste.
  9. Lemon juice is optional.
  10. This curry can be made in no time and goes well with chapatis and rice.
