Ingredients:

• eggs – 3
• Milk – 1/2 cup
• Onion – 1
• Tomato – 1
• Green chillies – 3
• Coriander leaves – a few sprigs
• Salt
• Grated cheese – 1 tbsp
• Italian spices, Oregano and paprika
• Butter – 1 tbsp

Method:

  1. Beat the eggs well along with milk until it turns fluffy
  2. To this add salt, finely cut onion, tomato, green chillies and coriander leaves.
  3. Melt some butter in a non-stick shallow pan and pour the egg mixture to make an omelette
  4. Sprinkle grated cheese, oregano and paprika over it
  5. Cook over a slow fire, until the egg is golden brown.
  6. Serve it hot with hot toasts and with finger chips
