Ingredients:

• 1 cup – All-purpose flour
• 1 cup – Whole Wheat flour
• 1/2 cup – Sugar
• 1/2 cup – Packed Brown sugar
• 3 tsp – Egg replacer powder + 4 tbsp Warm water
• 1/2 cup – Canola Oil
• 1/2 tsp – Baking soda
• 1 tsp – Baking powder
• 2 tbsp – Butter (at room temperature)
• 1/4 cup – Walnut pieces
• 20 – Smarties

Method:

  1. Make a soft cream with sugar, brown sugar, butter, canola oil and the thick paste of egg replacer powder mixed with warm water.
  2. Sieve all-purpose flour and whole wheat flour with baking powder and baking soda.
  3. Add gradually the dry ingredients with Smarties and walnut pieces to the creamy butter and sugar mixture and knead slowly into a soft dough.
  4. Line a baking sheet over a baking tray.
  5. Preheat the oven to 350 degrees F, make small balls from the dough, flatten them with your palms and place them over the baking sheet, leaving some space between the cookies.
  6. Bake them for 30 minutes or until they turn brown.
  7. Let them cool and store them in an airtight box.
