Ingredients:

• 2 cups – flour
• 1 cup – Sugar
• 1/3 cup – shortening
• 3/4 cup – Milk
• 1 – Egg
• 2 1/2 tsp – baking powder
• 1 tsp – vanilla essence
• 3/4 tsp – salt

Method:

  1. Soften shortening. Sieve flour, baking powder and salt.
  2. Add half the mixture and the slightly beaten egg.
  3. Mix until the flour is dampened.
  4. Using a mixie, beat at low speed for 2 mins.
  5. Add remaining milk and vanilla essence. Beat for a minute longer.
  6. Spoon into paper bake cups and place on muffin pan.
  7. Bake in moderate oven at 190 degree C or until done.
