Ingredients:
• 12 – big limes
• 75 gm – Ginger (chopped into big pieces)
• 1 kg – Sugar
• 1/2 liter – water
• 1 tbsp – Milk
Method:
- Boil the water with the sugar in a heavy bottomed steel vessel. After a boil add milk. Spoon off the dirt that collects on the top of the sugar syrup.
- Once the sugar dissolves completely remove from gas and cool completely.
- Strain and keep aside.
- Remove the juice of the limes.
- Add the ginger to the lime juice.
- Refrigerate for 24 hours.
- Remove the ginger pieces from the lime juice.
- Add this lime juice to the sugar syrup and mix well.
- Store in dry sterilised bottles and refrigerate.
- To Serve:
- In a glass pour approximately 3 tbsp ginger lime and sufficient water and crushed ice.
- Mix and serve chilled.
