Ingredients:

• For the Pie crust:
• 1.5 cups – plain flour
• 1/3 cup – margarine
• 1/2 tsp – salt
• 1.5 to 2 tbsp – cold Milk
• For the Filling:
• 1 cup – packed Brown sugar
• 2 eggs, beaten
• 2 tbsp – Butter
• 1 cup – cashewnuts, coarsely chopped
• 4 to 5 drops vanilla essence

Method:

  1. Sift together the flour and salt.
  2. Cut the margarine with a knife till the mixture resembles large breadcrumbs.
  3. Sprinkle cold milk and mix with a fork till dough can be formed into a ball.
  4. Handle dough as little as possible.
  5. Roll out on a floured board to a 10 inch circle.
  6. Fit into a greased pie dish.
  7. Fold edges under to thicken and flute attractively.
  8. Cream together the sugar and butter.
  9. Add vanilla, eggs and blend well.
  10. Mix the cashewnuts.
  11. Spoon into a pie crust.
  12. Bake in a pre-heated oven (350 degree F) for 20 to 25 mins till golden brown.
