Ingredients:
• For the Pie crust:
• 1.5 cups – plain flour
• 1/3 cup – margarine
• 1/2 tsp – salt
• 1.5 to 2 tbsp – cold Milk
• For the Filling:
• 1 cup – packed Brown sugar
• 2 eggs, beaten
• 2 tbsp – Butter
• 1 cup – cashewnuts, coarsely chopped
• 4 to 5 drops vanilla essence
Method:
- Sift together the flour and salt.
- Cut the margarine with a knife till the mixture resembles large breadcrumbs.
- Sprinkle cold milk and mix with a fork till dough can be formed into a ball.
- Handle dough as little as possible.
- Roll out on a floured board to a 10 inch circle.
- Fit into a greased pie dish.
- Fold edges under to thicken and flute attractively.
- Cream together the sugar and butter.
- Add vanilla, eggs and blend well.
- Mix the cashewnuts.
- Spoon into a pie crust.
- Bake in a pre-heated oven (350 degree F) for 20 to 25 mins till golden brown.
