Ingredients:

• 2 tbsp-oil
• 1 bay leaf, crumbled
• 2 Cloves garlic, crushed
• 2/3 cups grated unsweetened Coconut
• 1/4 cup Lemon juice
• 1.5 tsp-salt
• 1 cup water
• 2 pounds raw shrimp, shelled and deveined
• 1 medium onion, finely chopped
• 1 tbsp-ground coriander
• 1 tsp-cumin
• 1.5 tsps-cayenne pepper
• 1/2 tsp-mustard seeds, crushed
• 1/2 tsp-black pepper, crushed

Method:

  1. Heat oil and fry onion, coriander, cumin, cayenne pepper, mustard seeds, black pepper, bay leaf and garlic for 2 to 3 minutes
  2. Put in coconut and fry another minute or two
  3. Add lemon juice, salt and wate
  4. Simmer for 10 minutes
  5. Add shrimp and cook until done
