Ingredients:
• 2 cup – cooked Rice
• 1/4 kg – ivy gourd, chopped lengthwise
• 1 – onion, chopped
• 1/4 tsp – Turmeric powder
• Salt
• Oil
• 1 tsp – Mustard Seeds + Urad Dal
• A few – Curry leaves
• To roast and grind:
• 1 tbsp – Coriander seeds
• 1/4 cup – raw Peanuts
• 1 tsp – peppercorns
• 1 tsp – Cumin seeds
• 2 tbsp – desiccated Coconut
• 5 – dry Red Chillies
Method:
- Roast and grind to a fine powder all the ingredients and keep aside
- Heat enough oil in a pan, splutter the mustard seeds, urad dal and curry leaves, add the chopped onions, saute until they turn translucent.
- Add the chopped ivy gourd, salt, turmeric powder and cook in simmer until the vegetables turns soft.
- Now add the ground spice powder and cook again for few mins.
- Finally add the cooked rice, and toss well.
- Serve.
