Ingredients:

• 2 cup – cooked Rice
• 1/4 kg – ivy gourd, chopped lengthwise
• 1 – onion, chopped
• 1/4 tsp – Turmeric powder
• Salt
• Oil
• 1 tsp – Mustard Seeds + Urad Dal
• A few – Curry leaves
• To roast and grind:
• 1 tbsp – Coriander seeds
• 1/4 cup – raw Peanuts
• 1 tsp – peppercorns
• 1 tsp – Cumin seeds
• 2 tbsp – desiccated Coconut
• 5 – dry Red Chillies

Method:

  1. Roast and grind to a fine powder all the ingredients and keep aside
  2. Heat enough oil in a pan, splutter the mustard seeds, urad dal and curry leaves, add the chopped onions, saute until they turn translucent.
  3. Add the chopped ivy gourd, salt, turmeric powder and cook in simmer until the vegetables turns soft.
  4. Now add the ground spice powder and cook again for few mins.
  5. Finally add the cooked rice, and toss well.
  6. Serve.
