Ingredients:

• 1.75 l / 3 pints – Mango juice
• 900 g / 2 lb – Sugar
• 2.25 l/4 pints – Milk
• 450 g / 1 lb – Ghee
• 100 g / 4 oz – flaked Almonds
• 50 g / 2 oz – pistachios, chopped
• 50 g / 2 oz – Raisins

Method:

  1. Heat the mango juice, sugar and milk in a large pan.
  2. Simmer until it reaches a paste-like consistency.
  3. Gradually add the ghee, stirring well to prevent the mixture sticking to the pan.
  4. Pour the mixture into a greased baking tray.
  5. Flatten out evenly then sprinkle with the nuts and raisins.
  6. Leave to cool then cut into diamond-shaped pieces.
