Ingredients:

• 2 cups – mixed vegetables such as carrot, potato, Cauliflower (chopped)
• 3 – Onions (chopped)
• 3 – Green chillies (slit lengthwise)
• 1 tsp – Garlic (chopped)
• 1 tsp – Ginger (chopped)
• 1/2 tsp – pepper Corns
• 2 – Cloves
• 2 pieces – Cinnamon
• 1 cup – thick Coconut Milk
• Salt to taste
• 2 tbsp – oil

Method:

  1. Heat oil in a pan and fry onions till golden brown.
  2. Add green chillies, ginger, garlic, pepper and spices and saute for a few minutes.
  3. Add the vegetables, salt and sufficient water and cook till vegetables are tender.
  4. Stir in the coconut milk and simmer for a few minutes.
