Ingredients:

• 2 cups – lettuce/cabbage
• Grated rind of 1 Lemon
• Juice of 1 Lemon
• Salt to taste
• Pepper powder to taste

Method:

  1. Finely grate rind of lemon.
  2. Keep aside.
  3. Extract juice, strain out seeds, keep aside.
  4. Chill lettuce or cabbage in ice water till crisp.
  5. Drain, press out excess water with hands.
  6. Place drained lettuce in large salad bowl.
  7. Add all other ingredients.
  8. Toss lightly with fingers or a wooden fork.
  9. Serve chilled with crisp toast or piled on canapes.
