Ingredients:
• 2 cups – lettuce/cabbage
• Grated rind of 1 Lemon
• Juice of 1 Lemon
• Salt to taste
• Pepper powder to taste
Method:
- Finely grate rind of lemon.
- Keep aside.
- Extract juice, strain out seeds, keep aside.
- Chill lettuce or cabbage in ice water till crisp.
- Drain, press out excess water with hands.
- Place drained lettuce in large salad bowl.
- Add all other ingredients.
- Toss lightly with fingers or a wooden fork.
- Serve chilled with crisp toast or piled on canapes.
