Ingredients:

• 2 cups – Leftover cooked Rice noodles
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 1/2 tsp – Channa dal
• 1/4 tsp – Asafoetida powder
• 1/2 tsp – Turmeric powder
• 1 tbsp – Ginger (minced)
• 10 – Peanuts
• 2 – Green chillies (slit open)
• 2 – Dry Red Chillies
• 5 – Curry leaves
• 2 tbsps – Fresh Lemon juice
• Salt – to taste
• Oil – to fry

Method:

  1. Heat enough oil and add the mustard seeds, urad dal, channa dal, asafoetida powder and curry leaves. Fry them.
  2. Immediately, add the slit-open green chillies, dry red chillies, peanuts, minced ginger and turmeric powder and stir for a few minutes on low flame till the peanuts get fried.
  3. Now, add the already cooked rice noodles and toss them gently on low flame for a few minutes.
  4. Switch off the stove.
  5. Finally, add the lemon juice and toss well until the lemon juice mixes well with the rice noodles.
  6. Serve hot.
