Ingredients:

• 1.5 cups – basmati Rice
• 1 can – Coconut Milk
• 1 1/4 cans – Chicken stock
• 3/4 cup – cashew halves
• 1/2 cup – Raisins
• 1 tbsp – vegetable oil
• 1/2 tsp – ground cumin
• 1/2 tsp – ground coriander
• 1 pinch – crushed red pepper flakes
• 1 tsp – salt
• 1/4 tsp – ground Turmeric
• 1 – Bay Leaf

Method:

  1. Heat oil in a large pot over medium-high heat.
  2. Stir in rice, and cook for 2 minutes.
  3. Pour in the coconut milk, chicken stock, cumin, coriander, red pepper flakes, salt, turmeric, bay leaf, raisins, and cashew halves.
  4. Bring to a boil, then cover, and reduce heat to low.
  5. Cook until rice is tender, about 20 minutes.
