Ingredients:

• Basmati Rice – 2 cups
• Water – 3 cups
• Spices – 4 each (cinnamon, clove, cardamom)
• Onion – 1 large, finely sliced
• Ghee – 50 g
• Oil – for deep frying the Onion
• Cashews – 10
• Raisins – 10
• Salt to taste.

Method:

  1. Heat oil in a kadai and saute the cashews and the raisins. Fry the onions separately and keep aside.
  2. In the meanwhile, soak rice for 1/2 hour.
  3. In a vessel, cook rice with the salt, spices and water.
  4. When the rice is 3/4 done, pour ghee over the rice, cover and cook for 10-15 mins.
  5. Let it cool.
  6. Garnish with fried cashews, raisins and onion.
  7. Serve hot with any spicy chicken or mutton curry and pappodoms.
