Ingredients:

• Soya chunks – 1 cup
• Vegetable stock – 2 cups
• Green Papaya pieces, peeled, de-seeded and cut into medium-sized pieces – 1 cup
• Carrot, cut into chunks – 1
• Tomato, cut into wedges – 1
• French beans, stringed and cut into one-inch pieces – 6-8
• Butter – 1 tbsp
• Salt and pepper to taste

Method:

  1. Soak the soya chunks in hot salted water for 10-15 mins.
  2. Once the soya chunks or granules have swelled in the water, drain out the soaked soya from the water and squeeze out the excess water.
  3. Heat the butter and fry the soaked soya granules for one min.
  4. Now, mix in the vegetables and stir fry for 2-3 min.
  5. In the same pan, add stock and half cup of water. Lower the heat and bring the stock, soya granules and vegetables to boil.
  6. Add salt and pepper to taste.
  7. Continue to boil the soup for a further 2-3 mins.
  8. Serve piping hot.
