Ingredients:

• 500 g – finely minced lean Mutton
• 1 tbsp – ground coriander
• 1 tsp – ground Turmeric
• 1.5 tsp – ground Ginger
• 1.5 tsp – ground chillies
• 1.5 tsp – ground Khus Khus
• 1 tsp – fine desiccated Coconut
• 1 pinch of ground Cloves
• 1 pinch of ground Cinnamon
• 1 pinch of ground Cardamoms
• 1 tbsp – besan or ordinary flour
• salt to taste
• 100 g – Ghee
• To saute:
• 2 – small Onions (finely minced)
• 2 – Cloves of Garlic (finely minced)
• a squeeze of Lemon juice.

Method:

  1. Make a mixture of all the ingredients.
  2. In a stew pan, warm 50 g of ghee and fry lightly the small onions and 2 cloves of garlic, both finely minced.
  3. Add to this the above mixture, stir well and cook slowly for 10 to 15 minutes.
  4. Turn out, let it cool, and then either pound or grind it into a paste with a squeeze of lemon juice.
  5. Form into oval cutlets and fry in the usual way, or press on the metal skewers and grill, basting well.
