
Ingredients:
• 1 – large Aubergine
• 2 inches – grated root Ginger
• 2 Cloves – garlic, sliced
• 2 tsp – curry powder
• 1 tsp – cumin powder
• 1 tsp – chilli powder
• 1 tsp – Turmeric powder
• 5 tbsp – chopped Coriander leaves
• 1 cup – vegetable oil
Method:
- Heat the vegetable oil and fry the finely chopped onions until translucent.
- Add the curry powder, cumin powder, sliced garlic, and grated ginger and stir fry for 2 minutes.
- Chop the aubergine and add to the pan along with turmeric and chilli powder.
- Simmer on medium heat for 20-30 minutes until the aubergine is soft.
- Drain as much oil as you can.
- Garnish with the coriander leaves.
- Serve hot with rice and chapatis.
