Ingredients:

• 400g – val beans (anapa ginjalu)
• 1 medium onion, chopped fine
• 4 green chillies, chopped fine (reduce the no. for children)
• 1 red chilli, broken into pieces
• 1/4 tsp – cumin
• 6 peeled and crushed Garlic Cloves
• 8 Curry leaves
• 2 tsp – chopped, Coriander leaves
• 1.5 tbsp – desiccated Coconut powder (fresh if available)
• Salt
• 1 tbsp – oil
• 1/4 tsp – Mustard Seeds
• 1 tsp – Urad Dal (split)

Method:

  1. Boil the beans with salt till tender, drain and keep aside,
  2. Heat oil, add mustard seeds, urad dal, cumin, garlic, curry leaves and red chilli.
  3. Fry till the seeds splutter and dal changes colour to light brown.
  4. Add onions, green chillies and fry till onion becomes soft.
  5. Add the boiled beans, mix well, cover and cook for 3-4 minutes.
  6. Stir a couple of times.
  7. Sprinkle coriander leaves and desiccated coconut powder, mix well before removing from fire.
  8. Serve as tea time snack.
