Ingredients:

• 3 – wadis
• 4 – Potatoes
• 2 – Brinjals
• 3 – Tomatoes
• 2 – Onions
• 1 tsp – cumin powder
• 1.5 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• Coriander leaves – few sprigs
• Oil – 3 tbsp
• Water as required
• Salt to taste

Method:

  1. Heat oil in a thick bottom pan. Fry onions until brown, add in wadis and fry well.
  2. Add potatoes and saute, add tomatoes, brinjals and all dry masalas.
  3. Fry until well done.
  4. Now add water enough for the gravy and salt.
  5. Cover and cook the vegetable until wadis and potatoes are well done. Check for salt.
  6. Serve garnished with chopped coriander.
