Ingredients:
• 2 small Potatoes
• 1 Carrot
• 1 tsp – crushed Garlic
• 1 tbsp – minced green Onion
• 2 tbsp – Olive oil
• 1/4 cup – finely cut green beans
• 1/4 cup – finely sliced Mushrooms
• 1 tomato, peeled, seeded and chopped
• Salt and pepper, to taste
• For white sauce:
• 2 tbsp – unsalted Butter
• 2 tbsp – Maida
• 1 and 1/4 cup – Milk (about 300ml)
• a pinch of Oregano and Basil or Thyme
• Salt and pepper, to taste
• 50g – grated cheese
Method:
- Microwave potatoes and carrots for 4 mins.
- Add finely chopped French beans and microwave for further 4 mins. Wrap in a foil and keep aside.
- Cover and microwave crushed garlic and chopped green onion with 2 tbsp olive oil for 2 mins.
- Mix in chopped tomato and microwave for 3 mins. Add white sauce. Season with salt and pepper.
- For white sauce:
- Melt butter for 25 to 30 seconds, stir in flour, milk and oregano/basil/thyme, salt and pepper.
- Microwave on high for 2.5-3 minutes or until the sauce thickens. Whip the sauce once or twice in between.
- Stir in grated cheese and serve hot.
- Enjoy this wonderful tasting dish with pasta of your choice or with garlic bread.
