
Ingredients:
• 2 cups – whole Wheat flour
• 1/2 tsp – baking soda
• 1 tsp – baking powder
• 1 tsp – Cinnamon powder
• 1/4 tsp – Ginger powder
• 1/4 tsp – Cloves powder
• 1/4 tsp – Nutmeg powder
• 1/2 tsp – salt
• 1/2 cup – butter, at room temperature
• 1 cup – Sugar
• 2 – large eggs
• 3/4 cup – Pumpkin puree
• 1 tsp – vanilla extract
• 1 cup – finely chopped dark chocolate
Method:
- Preheat the oven to 350 F.
- Line the muffin cups.
- Sift flour, baking soda, baking powder, spice powders and salt and keep aside.
- In another bowl, beat the butter and sugar together until fluffy.
- Add the eggs one at a time and beat well.
- Beat in the vanilla extract and pumpkin puree.
- Fold in the chopped chocolate gently; do not over mix.
- Fill the muffin cups with this batter and bake on the middle rack for 20 minutes, until a skewer inserted comes out clean.
