
Ingredients:
• 1 large egg, beaten
• 350 gms. self raising flour
• 1 rounded tsp. ground Ginger
• 125 gms. soft light Brown sugar
• 125 gms. demerara Sugar
• 1tsp. bicarbonate of soda
• 125 gms. margarine
• 75 gms. golden syrup
Method:
- Preheat oven to 180 degrees C. Sieve the flour, ginger and bicarbonate of soda together into a bowl. Stir in the sugars.
- Melt the fat very gently into the syrup and pour into the dry ingredients.
- Mix with the egg to form a dough.Form into balls about the size of a small walnut and place well apart on a greased baking tray.
- Flatten them slightly with a fork and bake near the top of a moderate oven for about 10 minutes, until golden brown.
