Ingredients:
• 2 – tender Drumsticks
• 1/2 kg – yellow cooking Cucumber
• 2 cups – grated Coconut
• 8 to 10 – dry Red Chillies
• 8 – Cloves
• 2 pods – garlic, peeled and crushed lightly
• 1 – small piece of Tamarind
• salt to taste
• 2 tbsp – oil
Method:
- Cut the drumsticks into 5-cm long pieces.
- Cut the cucumber lengthwise (do not peel the skin). Discard the seeds and the core. Cut the remaining cucumber into 4-cm cubes.
- Combine both the vegetables. Add enough water to cover and cook.
- Meanwhile, roast the red chillies in 2 tsp of oil.
- Grind the coconut and tamarind to a smooth paste.
- Add salt and the paste to the cooked vegetables. Add water to get a gravy of medium pouring consistency and simmer for 3-4 minutes.
- Heat the remaining oil and saute the garlic until brown. Add to the koddel.
- Serve with steamed rice.
