Ingredients:
• Ghee or oil – 2 tbsp
• Onion – 1/2 cup, minced
• Ginger – 1 tsp, minced
• Chilli powder – 1/2 tsp
• Turmeric powder – 1/2 tsp
• Cumin powder – 1/2 tsp
• Garam Masala powder – 1/2 tsp
• Salt to taste
• Potato – 1 cup, boiled, peeled and cubed
• eggs – 2, lightly beaten
• Coriander leaves – 1 small bunch- to garnish
Method:
- Heat the ghee or oil in a pan and saute the onion and ginger until pink
- Add all the powders and salt
- Now add the potatoes and fry until a light brown
- Pour the eggs over them and cook
- Stir till the eggs set
- Serve hot garnished with coriander leaves.
