Ingredients:
• Cooked Rice – 2 cups
• Lemon 2
• Brinjal – 1/2 kg
• For Seasoning:
• Mustard Seeds 1 tsp
• Urad Dal 1/2 tsp
• Channa Dal 1/2 tsp
• Cumin seeds 1/2 tsp
• Hing a pinch
• Curry leaves for taste
• Dry roast and grind:
• Channa Dal 2 tsp
• Urad Dal 1.5 tsp
• Dhaniya 2 tsp
• Red Chillies 8
• Cinnamon small piece
• Dry Coconut (copra) little
Method:
- Cut brinjal into small cubes, soak in salted water for some time, drain and fry till tender.
- To the Brinjal, add the ground masala and rice. Mix well.
- Then season oil with the ingredients listed and pour over. Mix well again.
- Serve with a dash of lemon juice.
