
Ingredients:
• 2 cups – medium-thin Poha (flattened rice)
• 1 cup – boiled and cubed Potatoes
• 1 cup – chopped Capsicum
• 1/2 cup – chopped Onions
• 1/2 cup – chopped Tomatoes
• 1/2 cup – chopped coriander
• 2.5 tbsp – Lemon juice
• 1/2 tsp – Sugar
• Salt
• 1/2 tsp – Turmeric powder
• 1 tsp – Mustard Seeds
• A big pinch – Hing
• Oil
Method:
- Rinse poha well and keep aside for 10 minutes.
- Heal oil in a kadai and add mustard seeds and hing.
- Let it splutter well. Add chopped capsicum and onions.
- Saute it for a while and add potatoes and poha.
- Add salt, sugar, turmeric powder and lemon juice and mix well.
- Garnish with chopped coriander, tomatoes and serve hot.
