Ingredients:

• 1/2 kg – breast of Chicken
• 3 cm – Ginger
• 1 – Spring onion
• 1/4 tsp – pepper
• For the sauce:
• 2 tbsp – sherry
• 1 tsp – Sugar
• 9 – drops Vinegar
• 2 tbsp – sesame oil
• 2 tbsp – soy sauce
• A pinch of salt

Method:

  1. Put the chicken in a saucepan, cover with boiling water and cook for about 8 minutes.
  2. To make the sauce, combine sherry, sesame oil, sugar, salt, vinegar and soy sauce. Keep aside.
  3. Chop the ginger and spring onion finely.
  4. Slice the cooked chicken breast, including bones, crosswise with a cleaver into 1 centimetre strips.
  5. Place on a serving plate, sprinkle with chopped onion and ginger and pour over the sauce.
  6. Sprinkle with pepper and serve.
