
Ingredients:
• 1/2 kg – breast of Chicken
• 3 cm – Ginger
• 1 – Spring onion
• 1/4 tsp – pepper
• For the sauce:
• 2 tbsp – sherry
• 1 tsp – Sugar
• 9 – drops Vinegar
• 2 tbsp – sesame oil
• 2 tbsp – soy sauce
• A pinch of salt
Method:
- Put the chicken in a saucepan, cover with boiling water and cook for about 8 minutes.
- To make the sauce, combine sherry, sesame oil, sugar, salt, vinegar and soy sauce. Keep aside.
- Chop the ginger and spring onion finely.
- Slice the cooked chicken breast, including bones, crosswise with a cleaver into 1 centimetre strips.
- Place on a serving plate, sprinkle with chopped onion and ginger and pour over the sauce.
- Sprinkle with pepper and serve.
