
Ingredients:
• 2 cups – Wheat flour
• 1 – Carrot
• 7 – Paneer cubes
• 1 – Onion
• 2 – Green chillies
• Coriander leaves – a few
• 1/2 tsp – cumin
• 2 tsp – Lemon juice
• Turmeric powder – a pinch
• Water to knead.
Method:
- To make paratha stuffing:
- Grate the carrot and finely chop the onion.
- Put the paneer in hot water for 10 mins.
- Drain the water and crumble them by hand.
- Cut the green chillies into fine pieces. Chop the coriander leaves, too.
- In a kadai, add a tsp of oil and put the cumin, the green chillies, onions, carrots and the crumbled paneer. Saute for 3-5 mins.
- Add the turmeric powder, salt as needed and finally add the chopped coriander leaves.
- Allow the mixture to cool.
- Add the lemon juice to it and mix well.
- To make paratha:
- Knead the wheat flour into a soft pliable dough with some water and salt.
- Take lemon-sized balls of the dough, roll it into rotis.
- Place the stuffing on it. Roll it carefully into thick parathas.
- Heat the tawa and shallow fry the parathas.
