Ingredients:
• 1 cup – sweetened condensed Milk
• 1/2 cup – butter, softened
• 1/4 cup – yogurt
• 3tbsp – Lemon juice
• 1 tbsp – Lemon zest
• 1.5 cups – all-purpose flour
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 1/4 tsp – salt
• For filling:
• 1/2 cup – desiccated Coconut
• 1/4 cup – Cream cheese
• 3 tbsp – Sugar
Method:
- Preheat oven to 350F and line a baking parchment sheet over a baking loaf pan.
- In a bowl beat together condensed milk, butter at medium speed, scraping bowl often, until creamy.
- Meanwhile, sieve together the flour, baking powder and baking soda and keep it aside
- Blend yoghurt, lemon juice and lemon zest and beat till done.
- Stir in the sieved flour mixture and salt until well mixed.
- Mix the dry and wet ingredients together.
- For filling: Combine cream cheese and sugar and mix well.
- Stir in the desiccated coconut.
- Spoon half of batter into prepared pan and spread the filling mixture evenly over batter.
- Pour remaining batter over filling and bake for 40-45 minutes.
