Ingredients:

• 3 eggs – beaten
• 500 g – large Brinjals
• 2 – Onions
• Oil
• 1 tbsp – Mustard oil
• 1/4 tsp – pepper
• Salt to taste
• 1 bunch – coriander leaves, minced

Method:

  1. Wash and dry the brinjals
  2. Smear them with mustard oil and bake in a very hot oven at 260 degrees until soft and pulpy
  3. Peel the brinjals and mash the pulp thoroughly Keep aside
  4. Heat the oil and fry the onions till soft and golden brown
  5. Add the brinjal pulp and cook till the mixture is well blended and deep brown
  6. Add the eggs, salt and pepper
  7. Cook over a low heat for 10 mins, stirring constantly
  8. Add the coriander leaves, blend well and serve immediately
