Ingredients:
• 1 cup – quick cooking oats
• 1/2 cup – whole Wheat pastry flour
• 2 tbsp – all-purpose flour
• 1 tbsp – sesame seeds
• 1/2 tsp – baking soda
• 1/2 tsp – baking powder
• 2 tbsp – Olive oil
• Water
• Salt
Method:
- Preheat the oven to 350F.
- Grind the quick cooking oats as fine powder.
- In a bowl mix the ground oats flour, whole wheat pastry flour, all-purpose flour, baking soda, sesame seeds, salt and baking powder.
- Gradually add olive oil and water and knead everything as soft dough.
- Let this dough sit for half an hour.
- Roll the dough with rolling pin as a large disc, cut the dough as cookies with a cookie cutter.
- Arrange the uncooked cookies over the baking sheet, leave some space between each cookies and bake for 15-20 minutes.
