
Ingredients:
• 250 gm- Rice noodles
• 1- Broccoli floret
• 1- Carrot
• 1/2 cup- Green peas
• 1- Potato
• 1- Onion, big
• 2 to 3- green chillies(according to your taste)
• 1 inch piece- Ginger
• 1 tsp- Madras Curry Powder
• salt to taste
• 4 to 5 tsp- Oil
• For seasoning:
• 1/2 tsp- Mustard Seeds
• 1/2 tsp- Urad Dal
• 1/2 tsp- Cuminutes
Method:
- Heat water in a big bowl. When it starts boiling, switch off the flame and add rice noodles to it (add spoon of oil to separate noodles from each other).
- Keep for few minutes till rice noodles gets tender (you can test by taking noodle in your hand).
- Don’t let it remain in water for long time. Drain and cool.
- Cut green chillies, carrot, broccoli, potato, ginger and onions lengthwise.
- Cook carrot, broccoli, potato for 1 minute in a microwave.
- In a separate pan, add 2 to 3 tsp oil and add seasoning like little mustard seeds, urad dal, cumin seeds. Then add green chillies, onions, ginger, green peas.
- Fry for few minutes and add all cooked vegetables. Now add Madras curry powder, salt. Stir them for few minutes in a low flame.
- Add cooked rice noodles to it. Mix well.
