Ingredients:

• 125 g – unsalted Butter (soft Butter at room temperature)
• 2 tbsp – caster Sugar
• 2 tbsp – golden syrup
• 1/2 cup – Currants / Raisins
• 1/2 cup – rolled oats
• 1/2 cup – all-purpose flour
• 1/2 cup – Rice flour

Method:

  1. Brush two 32 x 28 cm biscuit trays, with melted butter or oil.
  2. Using an electrical beater, beat butter, sugar and golden syrup in a small mixing bowl, until light and creamy.
  3. Transfer the mixture to a large mixing bowl, add currants and oats.
  4. Using a metal spoon, stir until combined.
  5. Add sifted flour, stir until well blended.
  6. Roll this mixture into a log shape, 30 cm long. Press log into triangular shape using a butter paper.
  7. Cover and refrigerate for 30 minutes or until firm. Then it will be very easy to make thin slices.
  8. Heat oven (OTG) to moderate 180 degree C or 350 degree F.
  9. Cut the log into 6 mm slices and place the slices onto prepared trays.
  10. Bake for 12 – 15 minutes or until light golden colour. Transfer to a wire rack to cool. Serve as a snack.
