Ingredients:

• 5 – boiled Potatoes
• 1/2 tsp – salt
• 1/2 tsp – Cumin seeds
• 2 tbsp – Arrowroot or Corn flour
• For stuffing:
• 4 tbsp – grated fresh Coconut
• 3 – chopped Green chillies
• 1 tsp – grated Ginger
• 2 tbsp – roasted and crushed Peanuts
• 3 tbsp – fresh coriander
• 1.5 tsp – Lemon juice
• 1 tsp – Sugar

Method:

  1. Take a bowl, add boiled and mashed potato, salt, cumin seeds and arrowroot, mix well.
  2. Mix grated coconut and all the stuffing ingredients in a bowl (don’t add salt in the filling).
  3. Grease your palms, and take a small ball of potato mixture, and flatten it.
  4. Stuff with coconut mixture and seal properly, and roll in dried corn flour or arrowroot.
  5. Heat oil in a pan and Deep Fried these kachoris on medium heat till golden brown in colour.
  6. Drain on a tissue paper and serve hot.
  7. Serving suggestions: Serve with mint chutney or plain curd.
