Method:
- Slit lady’s finger half lengthwise. If too long cut into 3-inch long pieces.
- Heat 1 tbsp oil in a non-stick pan.
- Add lady’s finger and stir fry till it is crisp.
- If overdone, it will turn blackish. If underdone, it will be sticky.
- Remove from pan and keep aside till required.
- Heat remaining oil in same pan and stir fry onions till golden brown.
- Keep aside in a pan till required.
- Just before serving, heat onions in pan.
- Add all other seasonings and stir fry for a few seconds.
- Add lady’s finger, salt and stir and pour into a serving dish.
- Garnish with chopped coriander.
- Serve hot and crisp with roti, rice or parathas.
