
Ingredients:
• 125 g – margarine
• 150 g – castor Sugar
• 4 tbsp – Honey
• 1 tsp – vanilla essence
• 250 g – dried mixed fruits
• 115 g – mixed fruit cocktail
• 115 g – Refined flour
• 1/2 tsp – each of cinnamon, Nutmeg and Ginger powdered
• 60 g – bread crumbs
• 70 ml – rum or brandy
• 2 – Egg
Method:
- Take a microwave bowl of 1.5 litre capacity and grease it well.
- Mix margarine and sugar with a beater till fluffy.
- Add one egg at a time and beat them well.
- Mix in the honey and the essence.
- Add in the canned fruit cocktail, dry fruits refined flour, essence, spices, breadcrumbs and brandy or rum.
- After mixing thoroughly, put the prepared mixture in the bowl.
- Cook on low 30% until done (approx 40 mins).
