Ingredients:

• 125 g – margarine
• 150 g – castor Sugar
• 4 tbsp – Honey
• 1 tsp – vanilla essence
• 250 g – dried mixed fruits
• 115 g – mixed fruit cocktail
• 115 g – Refined flour
• 1/2 tsp – each of cinnamon, Nutmeg and Ginger powdered
• 60 g – bread crumbs
• 70 ml – rum or brandy
• 2 – Egg

Method:

  1. Take a microwave bowl of 1.5 litre capacity and grease it well.
  2. Mix margarine and sugar with a beater till fluffy.
  3. Add one egg at a time and beat them well.
  4. Mix in the honey and the essence.
  5. Add in the canned fruit cocktail, dry fruits refined flour, essence, spices, breadcrumbs and brandy or rum.
  6. After mixing thoroughly, put the prepared mixture in the bowl.
  7. Cook on low 30% until done (approx 40 mins).
