Ingredients:
• 1 cup – ripe chopped papaya, Peach or other fruit
• 1 tbsp – Sugar
• 6 to 8 – crushed ice cubes
• 1 tsp – Lemon juice
• 1/2 cup – chilled water
• 1/4 tsp – salt
• A small end sprig – kaffir Lime leaves or Mint leaves
Method:
- Put the fruit in an electric blender. Run till smooth.
- Add all the other ingredients, except leaves.
- Run, till drink is frothy and light.
- Pour into chilled glasses, allow to froth over.
- Garnish rim with leaves and serve immediately.
- Shelf life: Best fresh.
