Ingredients:

• 1 cup – ripe chopped papaya, Peach or other fruit
• 1 tbsp – Sugar
• 6 to 8 – crushed ice cubes
• 1 tsp – Lemon juice
• 1/2 cup – chilled water
• 1/4 tsp – salt
• A small end sprig – kaffir Lime leaves or Mint leaves

Method:

  1. Put the fruit in an electric blender. Run till smooth.
  2. Add all the other ingredients, except leaves.
  3. Run, till drink is frothy and light.
  4. Pour into chilled glasses, allow to froth over.
  5. Garnish rim with leaves and serve immediately.
  6. Shelf life: Best fresh.
