Ingredients:

• 3 Corn cobs (a large can of Corn kernels can be used instead)
• 2 medium onions, skinned and chopped
• 1 small green pepper, seeded and chopped
• 1 tbsp. whole grain mustard
• 1 level tsp. Turmeric powder
• 2 level tbsp. plain flour
• 300 ml. white Vinegar
• Pinch of salt

Method:

  1. If using fresh corn cobs, boil and remove kernels.
  2. Put all the remaining ingredients in a large heat proof bowl and microwave by cooking on high 5-7 minutes or until boiling, stirring once.
  3. Add corn and cook on high for another 6-7 minutes until thickened.
  4. Pour into hot sterilized jars. Close with air tight caps.
