Ingredients:

• 2 cups – rice, soaked
• 1 cup – cashews, chopped
• 1/2 cup – Ghee
• 1/2 cup – Mustard Seeds
• 1/2 – coconut, grated
• 6 – green chillies, seeded and chopped
• 4 to 5 – limes, juiced
• 1 tsp – Turmeric
• 1/2 tsp – salt
• 2 – curry leaves, chopped
• 1 tbsp – finely chopped Coriander leaves
• 1 – lime, sliced for garnish

Method:

  1. Cook the rice and keep aside.
  2. Add lime juice, coconut, turmeric and salt to cooked rice.
  3. Set aside.
  4. Heat ghee and fry mustard seeds until they pop.
  5. Add cashews, curry leaves and chillies, and cook for 3 minutes, stirring.
  6. Combine with rice and coriander leaves and mix well.
  7. Cover and cook over low heat for 15 minutes to heat through.
  8. Garnish with lime slices.
