
Ingredients:
• 1.3 cups – Flaked Coconut
• 2/3 cup – Sugar
• 2 – eggs
• 1/2 tsp – Vanilla essence
• A pinch of salt
Method:
- Separate yolks from whites.
- Beat egg whites with a pinch of salt and vanilla essence till soft peaks form.
- Slowly add sugar and continue to beat till stiff.
- Gently fold in coconut.
- Using a teaspoon, drop a little mixture onto a greased cookie sheet.
- Bake in moderately slow oven at 180 degrees C. for about 20 minutes.
