Ingredients:

• 1.3 cups – Flaked Coconut
• 2/3 cup – Sugar
• 2 – eggs
• 1/2 tsp – Vanilla essence
• A pinch of salt

Method:

  1. Separate yolks from whites.
  2. Beat egg whites with a pinch of salt and vanilla essence till soft peaks form.
  3. Slowly add sugar and continue to beat till stiff.
  4. Gently fold in coconut.
  5. Using a teaspoon, drop a little mixture onto a greased cookie sheet.
  6. Bake in moderately slow oven at 180 degrees C. for about 20 minutes.
