Ingredients:
• 500 gms – Mutton (leg pieces)
• 1 – onion, chopped
• 1 tsp – Ginger paste
• 2 tsp – Garlic paste
• Grind to powder:
• 4 – Cloves
• 4 – green Cardamom
• 1-inch stick – Cinnamon
• 10/12 – black pepper
• 1 – Bay Leaf
• 1 tsp – Red Chilli powder
• 1 tsp – Cumin seed powder
• 2 tsp – coriander powder
• 1 tsp – Turmeric powder
• 3/4 cup – Curd
• 4 – tomatoes, cut into pieces
• 4 tbsp – oil/ghee
• salt to taste
Method:
- Marinate mutton pieces with salt, turmeric powder and curd for an hour, keep covered.
- Heat oil/ghee in a wok, add bay leaf, onion and the ground masala and cook for about 10 minutes.
- Add marinated mutton pieces, a little turmeric powder, ginger and garlic paste, powdered spices, tomatoes and salt to taste and cook for 15/20 minutes.
- Cover and simmer till meat is done and the gravy is reduced.
- Serve hot with rice or parathas.
