Ingredients:

• 2 cups – basmati Rice (cooked)
• 2 cups – mixed vegetables (carrots, bell peppers, baby corn, beans, green peas)
• 1/2 cup – Paneer (cubed)
• 1 – Onion (sliced lengthwise)
• 3 – Tomatoes (chopped roughly)
• 1 tsp – Cumin seeds
• 1/2 tsp – Garam Masala powder
• 1 tsp – Red Chilli powder
• 1/2 tsp – Cumin seed powder
• 1/4 tsp – pepper powder
• 2 tbsp – Coriander leaves
• salt to taste
• oil as needed

Method:

  1. Heat enough oil in a pan. Add the cumin seeds and let them splutter.
  2. Add the onion slices and saute until translucent.
  3. Add the mixed vegetables and stir with red chilli powder, cumin seed powder, pepper powder, garam masala powder, coriander leaves and salt.
  4. Grind the chopped tomatoes as puree.
  5. Heat a few drops of oil in a small pan and shallow-fry the paneer cubes until they turn golden brown. Keep aside.
  6. Once the vegetables are half-cooked, add the tomato puree and cook everything on medium high flame until the oil separates.
  7. Add the cooked rice and paneer cubes and toss gently to mix everything well. Serve hot.
